Dr. Chen Haihong, a postdoctoral fellow at the Shenzhen International Graduate School of Tsinghua University, Dr. Wang Yi and Professor Xing Xinhui from the Department of Chemical Engineering of Tsinghua University, etc. summarized the extraction and purification methods, physical and chemical properties, nutritional activity, and application and prospects of hemp seed protein in the food industry in this article. Extraction and purification of hemp seed protein

Protein can be divided into plant protein, animal protein and microbial protein according to its source, and the source of protein also determines its extraction method to a certain extent. The extraction of plant protein usually includes chemical extraction, physical extraction and enzyme-assisted extraction (Figure 1), while the commonly used extraction methods of hemp seed protein include chemical extraction, physical extraction and enzyme-assisted extraction. As a plant seed with extremely high oil content, the extraction of hemp seed protein usually includes steps such as pressing to remove oil, extraction, concentration and separation.
